2 Portabella
mushroom caps
Remove stems,
wash and dry and rub with olive oil. Grill, bake, or pan saute until
tender on both sides (about 5-15 min on med heat).
Saute in pan
with olive oil:
2 Portabella
mushroom stems, chopped
5-10 green or black olives green, chopped
1 tsp Italian seasonings
3-6 cloves garlic (personal preferences)
1/4 cup chopped onions
1/4 cup chopped peppers (green/red)
1/4 cup chopped tomatoes
After veggies
are sauted for 10 min, add 1/2 cup cooked salmon and saute an extra
5 to 10 minutes.
Place mushroom
caps in foil/bake pan and splash caps top with olive oil and balsamic
vineager/ and then fill each cap with salmon/veggie mix then top
with shredded mozerelle low fat cheese then sprinkle with grated
parmesian cheese.
Broil/grill/bake
until cheese is melted and lightly browned let cool for 5-10 minutes
and enjoy your piece of heaven.
